Preparation Steps

  1. 1

    Cook the Vegetables

In a large skillet, heat olive oil over medium-high heat. Add the sliced onions and bell peppers. Sauté for about 5 minutes until they start to soften.

  2. 2

    Add Mushrooms

Add the sliced mushrooms to the skillet with the onions and bell peppers. Continue to sauté for another 5-7 minutes until the mushrooms are browned and the vegetables are tender.

  3. 3

    Cook the Beef

Push the vegetables to the side of the skillet and add the thinly sliced ribeye beef. Season with salt and black pepper. Cook for about 3-5 minutes, stirring frequently, until the beef is cooked through.

  4. 4

    Melt the Cheese

Once the beef is cooked, layer the provolone cheese slices over the beef and cover the skillet with a lid. Let it sit for about 2 minutes until the cheese is melted.

  5. 5

    Assemble the Sandwich

Slice the hoagie rolls open and fill them with the beef and vegetable mixture. Serve immediately.

  6. 6

Serve with Red Chile Au Jus

Provide a side of red chile au jus for dipping.
