Churro Preparation

    Make the Churro Dough

    In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Remove from heat and stir in flour until the mixture pulls away from the sides of the pan. Allow to cool slightly before adding eggs one at a time, mixing well after each addition until smooth.

    Prepare for Frying

    Heat oil in a deep fryer or large pot to 350°F (175°C). Line a baking sheet with paper towels.

    Pipe the Churros

    Transfer the churro dough to a piping bag fitted with a star tip. Pipe 4-6 inch lengths of dough directly into the hot oil, cutting with scissors. Fry until golden brown, about 2-3 minutes per side.

    Coat the Churros

    Remove churros from oil and drain on paper towels. While still warm, coat them in a mixture of sugar and cinnamon.

    Fill the Churros

    Using a piping bag, fill each churro with caramel sauce through one end.

    Serve churros warm with a side of vanilla or chocolate ice cream and a dollop of whipped cream.
