Cook the Fries
Preheat the oven according to the package instructions for the French fries. Spread the frozen fries on a baking sheet, drizzle with vegetable oil, sprinkle with salt and black pepper, and bake until golden and crispy, about 20-25 minutes.

Prepare the Chile Sauce
While the fries are baking, heat the red and green chile sauces in separate pans over low heat. Stir occasionally until warmed through.

Assemble the Dish
Once the fries are done, remove them from the oven and place them on a large serving plate. Pour the warmed chile sauce (red or green) over the fries, then top generously with shredded cheddar cheese.

Melt the Cheese
Return the loaded fries to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven, garnish with chopped green onions if desired, and serve immediately while hot.
