Cook the Sushi Rice
Rinse sushi rice under cold water until water runs clear. Combine the rice and water in a medium pot and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let sit, covered, for 10 minutes.

Prepare the Fillings
While the rice is cooking, julienne the cucumber and finely chop the green onions. In a bowl, mix canned tuna with spicy mayo until well combined.

Assemble the Rolls
Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small edge at the top. Place tuna mixture, cucumber, and green onions in a line across the center of the rice.

Roll the Sushi
Using the mat, gently lift the edge of the mat closest to you and begin to roll away from you, pressing firmly but gently as you go. Roll until the edge of the nori is reached. Wet the edge of the nori with a little water to seal the roll.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds and serve with additional spicy mayo on the side.
