Preparation

  1. 1

    Cook the Grains

Rinse quinoa and wild rice under cold water. In a pot, combine quinoa and wild rice with 4 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until cooked. Drain and set aside.

  2. 2

    Prepare the Vegetables

Thinly slice the carrots, red cabbage, red onion, and cucumber. Set aside in a large bowl.

  3. 3

    Prepare the Tuna

Season the tuna steak with salt and pepper. Sear it in a hot skillet for about 1-2 minutes on each side for medium-rare. Remove from heat and let it rest before slicing into thin tataki-style strips.

  4. 4

    Prepare the Dressing

In a bowl, mix the cilantro yogurt dressing ingredients until well combined.

Assembly

  1. 5

    Assemble the Bowl

In a bowl, layer the cooked quinoa and wild rice. Top with sliced vegetables, tataki tuna, avocado slices, sultanas, and almonds. Drizzle with cilantro yogurt dressing before serving.
