Preparation of Grains

    Cook Quinoa and Wild Rice

    Rinse quinoa and wild rice under cold water. In a saucepan, combine quinoa and wild rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until cooked. Fluff with a fork and set aside.

Falafel Preparation

    In a food processor, combine canned chickpeas, garlic cloves, cumin, coriander, parsley, salt, and pepper. Pulse until a coarse mixture forms. Transfer to a bowl and mix in flour. Form small balls and refrigerate for 30 minutes.

    Heat oil in a frying pan over medium heat. Fry falafel balls until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.

    In a blender, combine yogurt, cilantro, and lemon juice. Blend until smooth and adjust seasoning if necessary.
