Chicken Marinade

Method

Marinate Chicken

  1. 1

    Step 1

In a large bowl, combine buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare Breading

  1. 2

    Step 2

In a separate bowl, mix together flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Fry Chicken

  1. 3

    Step 3

Heat oil in a deep fryer or large pot to 350°F (175°C). Remove chicken from marinade, allowing excess to drip off, then dredge each piece in the flour mixture, shaking off excess.

  2. 4

    Step 4

Fry chicken pieces in batches for about 15-20 minutes or until golden brown and cooked through. Drain on paper towels.

Make Gravy

  1. 5

    Step 5

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden. Gradually whisk in chicken broth, cooking until thickened. Season with salt and black pepper.

Prepare Blue Ranch Dip

  1. 6

    Step 6

In a bowl, combine sour cream, mayonnaise, buttermilk, dill, garlic powder, onion powder, blue cheese crumbles, and salt. Mix well and refrigerate until ready to serve.

Serve

  1. 7

    Step 7

Serve the fried chicken hot with the gravy and blue ranch dip on the side.
