Prepare the Crostini

Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices. Arrange the slices on a baking sheet and brush both sides with 2 tablespoons of EVOO. Bake in the oven for about 8-10 minutes or until golden brown and crispy. Remove from the oven and let cool slightly.

Sear the Tomatoes

While the crostini are baking, wash and slice the tomatoes in half. Heat 1 tablespoon of EVOO in a skillet over medium-high heat. Add the tomato halves cut-side down and sear for about 2-3 minutes until they have a nice char. Remove from heat and season with salt and black pepper.

Assemble the Crostini

To assemble, place a slice of burrata on each crostini. Top with the seared tomatoes and a drizzle of the remaining EVOO. Garnish with fresh basil leaves and additional salt and pepper to taste.
