Method

Preparation Steps

  1. 1

    Blister the Cherry Tomatoes

Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with 2 tablespoons of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 15-20 minutes, or until they are blistered and slightly caramelized.

  2. 2

    Prepare the Crostini

While the tomatoes are roasting, slice the baguette into 1/2 inch thick slices. Brush both sides of the slices with the remaining 2 tablespoons of olive oil. Place them on a separate baking sheet and toast in the oven for about 5-7 minutes or until golden brown and crispy.

  3. 3

    Assemble the Antipasto

Once the tomatoes are done, remove them from the oven and let them cool slightly. On a serving platter, arrange the blistered tomatoes, torn pieces of burrata cheese, and fresh basil leaves. Drizzle with balsamic glaze and additional olive oil if desired.

  4. 4

    Serve with Crostini

Serve the antipasto with the toasted crostini on the side for dipping and spreading.
