    Prepare the Onions

    Slice the onions into thin rings. In a skillet, melt 1 tablespoon of butter over medium heat. Add the onions and sauté until they are golden brown and caramelized, about 10-15 minutes. Set aside.

    Prepare the Schnitzel

    Pound the pork schnitzel to about 1/4 inch thick. Season with salt and pepper on both sides.

    Breading Process

    Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second, and bread crumbs in the third. Dredge each schnitzel in flour, then dip in the egg, and finally coat with bread crumbs.

    Fry the Schnitzel

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded schnitzels and fry until golden brown and cooked through, about 3-4 minutes per side. Remove from skillet and place on paper towels to drain excess oil.

    Top each schnitzel with the caramelized onions and the remaining tablespoon of butter. Serve immediately with your choice of sides.
