    Prepare the Grill

    Soak the wood chips in water for at least 30 minutes before grilling. This will help create smoke when they are heated.

    Season the Bratwurst

    In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub the bratwurst with olive oil and then coat them with the seasoning mixture.

    Preheat the Grill

    Preheat your grill to medium heat, around 350°F (175°C). If using a charcoal grill, place the soaked wood chips in a smoker box or wrap them in foil and poke holes in the foil to allow the smoke to escape.

    Smoke the Bratwurst

    Place the bratwurst on the grill over indirect heat. Add the soaked wood chips to the heat source and close the lid. Smoke the bratwurst for about 30-40 minutes, turning occasionally, until they reach an internal temperature of 160°F (71°C).

    Sear the Bratwurst

    Once smoked, move the bratwurst over direct heat for 2-3 minutes on each side to achieve a nice sear and grill marks.

    Remove the bratwurst from the grill and let them rest for a few minutes. Serve with your favorite buns and toppings.
