Prepare the schnitzel
Pound the pork schnitzel pieces to about 1/4 inch thick. Season with salt and black pepper.

Breading process
Set up a breading station: place flour in one plate, beaten eggs in another, and breadcrumbs in a third. Dredge each schnitzel in flour, dip in the egg, and coat with breadcrumbs.

Fry the schnitzel
In a large skillet, heat the vegetable oil over medium heat. Fry the breaded schnitzels for about 4-5 minutes on each side or until golden brown. Remove and place on paper towels to drain excess oil.

Make the brown sour cream gravy
In the same skillet, add chopped onion and minced garlic, sauté until softened. Sprinkle in paprika and cook for another minute. Pour in beef broth and bring to a simmer. Stir in sour cream and stir until well combined. Season with salt and pepper to taste.

Serve
Plate the schnitzels and generously ladle the brown sour cream gravy over the top. Enjoy!
