In a small bowl, mix warm water, yeast, and honey. Let it sit for about 5-10 minutes until frothy.

In a large mixing bowl, combine the gluten-free flour blend, salt, and xanthan gum.

Add the activated yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.

Knead the Dough
Knead the dough for about 5 minutes until smooth. If the dough is sticky, add a little more flour blend.

Cover the dough with a clean cloth and let it rise in a warm place for about 30-45 minutes, or until it doubles in size.

Preheat the oven to 475°F (245°C).
