Marinade Preparation

    Prepare the Chiles

    In a small pot, add the guajillo and ancho chiles, cover with water, and bring to a boil. Once boiling, reduce heat and let simmer for 10 minutes until softened. Drain and set aside.

    Blend the Marinade

    In a blender, combine the softened chiles, garlic, cumin, oregano, salt, black pepper, apple cider vinegar, brown sugar, and pineapple juice. Blend until smooth.

    Marinate the Pork

    Place the sliced pork shoulder in a large bowl or a ziplock bag. Pour the blended marinade over the pork, ensuring it is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Preheat the Grill

    Preheat your grill or a large skillet over medium-high heat.

    Cook the Pork

    Remove the pork from the marinade and let excess marinade drip off. Grill the pork for about 4-5 minutes per side or until cooked through and slightly charred. Remove from grill and let rest for a few minutes.

    Chop the Pork

    Once rested, chop the grilled pork into small pieces.

Assembling the Tacos

    Warm the Tortillas

    In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Place a generous portion of the chopped pork on each tortilla. Top with chopped onion, cilantro, and diced pineapple. Serve with lime wedges on the side.
