Making the Dough
Step 1: Prepare the Mixture
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.
Step 2: Add Flour
Once boiling, remove the saucepan from heat and add 1 cup of all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.
Step 3: Incorporate Eggs
Allow the dough to cool slightly for about 5 minutes. Add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Preparing Cinnamon Sugar
Step 4: Mix Cinnamon Sugar
In a small bowl, combine 1 cup of sugar and 2 tablespoons of ground cinnamon. Set aside.
Frying Churros
Step 5: Heat the Oil
In a deep frying pan, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).
Step 6: Pipe the Dough
Transfer the dough to a piping bag fitted with a large star tip. Pipe 4-6 inch long strips of dough directly into the hot oil.
Step 7: Fry the Churros
Fry the churros until golden brown and crispy, about 2-3 minutes per side. Remove them with a slotted spoon and drain on paper towels.
