Make the Chipotle Mayo

In a blender or food processor, combine the mayonnaise, chipotle peppers, lime juice, garlic powder, and salt. Blend until smooth and well combined. Taste and adjust salt if needed. Transfer to a bowl and refrigerate until serving.

Prepare the Leeks

Trim the roots and dark green tops of the leeks. Slice the leeks in half lengthwise, then cut into thin half-moons. Rinse thoroughly under cold water to remove any dirt or grit.

Fry the Leeks

In a large skillet, heat the vegetable oil over medium heat. Once hot, add the sliced leeks in batches, frying until golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to transfer the fried leeks to a paper towel-lined plate to drain excess oil. Season with salt while still hot.

Heat the Smoked Trout

If the smoked trout is cold, gently warm it in a skillet over low heat for about 2-3 minutes on each side. Be careful not to overheat, as it can dry out.

Plate the Dish

On a serving plate, place the warm smoked trout fillets. Top with a generous handful of fried leeks. Serve with a side of chipotle mayo for dipping.
