Prepare the Chorizo
In a skillet, cook the chorizo over medium heat until fully browned, about 5-7 minutes. Drain excess fat if necessary.

Mix the Cheeses
In a large bowl, combine Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix well until the cheeses are evenly distributed.

Add Chorizo and Jalapeños
Add the cooked chorizo and diced jalapeños to the cheese mixture. Stir until well combined.

Prepare the Baking Dish
Preheat your oven to 375°F (190°C). Grease a baking dish with a bit of oil or cooking spray.

Transfer to Baking Dish
Pour the cheese and chorizo mixture into the greased baking dish, spreading it evenly.

Bake the Queso Fundido
Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Prepare the Tortillas
While the queso fundido is baking, warm the corn tortillas in a skillet over medium heat for about 1-2 minutes on each side until pliable.

Once the queso fundido is done, remove it from the oven. Garnish with chopped cilantro and serve immediately with warm corn tortillas.
