Method

Cheese Mixture Preparation

  1. 1

    Mix Cheese Ingredients

In a mixing bowl, combine goat cheese, cream cheese, minced garlic, cumin, salt, and pepper. Blend well until smooth and creamy.

  2. 2

    Transfer to Baking Dish

Transfer the cheese mixture into an oven-safe baking dish, spreading it evenly.

Pepita Sauce Preparation

  1. 3

    Toast Pepitas

In a dry skillet over medium heat, toast the pumpkin seeds until they are fragrant and slightly golden, about 5 minutes. Stir frequently to prevent burning.

  2. 4

    Blend Sauce Ingredients

In a blender or food processor, combine toasted pepitas, olive oil, minced garlic, chopped cilantro, lime juice, and salt. Blend until smooth, adding a little water if necessary to reach your desired consistency.

Tortilla Preparation

  1. 5

    Prepare Tortillas

In a large skillet, heat olive oil over medium heat. Add blue corn tortillas one at a time, cooking for about 30 seconds on each side until they are crisp and golden. Remove from skillet and sprinkle with salt.

Final Assembly

  1. 6

    Bake Cheese Mixture

Preheat the oven to 350°F (175°C). Bake the cheese mixture for 15 minutes or until it is bubbly and slightly golden on top.

  2. 7

    Serve

Remove the dish from the oven and drizzle with pepita sauce. Serve immediately with crispy blue corn tortillas on the side for dipping.
