Preparation of Meat

Cook the Hanger Steak

Season the hanger steak with salt and pepper. Heat a skillet over medium-high heat and add a little oil. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until your desired level of doneness. Remove from skillet and let rest for 5 minutes before slicing.

Cook the Bacon

In the same skillet, add the bacon slices and cook over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.

Heat the Black Beans

In a saucepan over medium heat, add the black beans. You can use canned beans; simply drain and rinse them before heating. Stir occasionally and heat until warmed through, about 5 minutes.

Cook the Eggs

In a non-stick skillet, add a little oil or butter over medium heat. Crack the eggs into the skillet, taking care not to break the yolks. Cook for about 3-4 minutes until the whites are set but the yolks are still runny (over medium).

Plate the Dish

On a serving plate, layer the warmed black beans. Slice the hanger steak and place on top of the beans. Add the crispy bacon, followed by the eggs. Drizzle with tomatillo crema and finish with a dollop of crema. Serve immediately.
