Preparation

    Rinse the Rice

    In a fine mesh strainer, rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

    Soak the Rice

    In a bowl, combine the rinsed rice and 2 cups of water. Allow the rice to soak for at least 4 hours or overnight for best results.

Cooking

    Blend the Rice

    After soaking, drain the rice and transfer it to a blender. Add the remaining 2 cups of water and cinnamon sticks. Blend until the mixture is smooth and the rice is finely ground, about 1-2 minutes.

    Strain the Mixture

    Pour the blended mixture through a fine mesh sieve or cheesecloth into a large bowl or pitcher, pressing down to extract as much liquid as possible. Discard the solids.

    Sweeten the Horchata

    To the strained liquid, add sugar, vanilla extract, milk, and a pinch of salt. Stir until the sugar is fully dissolved.

Serving

    Chill and Serve

    Chill the horchata in the refrigerator for at least 30 minutes. Serve over ice, and sprinkle with ground cinnamon if desired.
