Guacamole

Crisp Blue Corn Tortillas

Method

Guacamole

  1. 1

    Prepare the Avocados

Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

  2. 2

    Mash and Mix

Using a fork or potato masher, mash the avocados to your desired level of creaminess. Add lime juice, chopped red onion, cilantro, jalapeño, and salt. Mix until well combined.

  3. 3

    Taste and Adjust

Taste the guacamole and adjust seasoning if necessary, adding more salt or lime juice to your preference.

Hanger Steak

  1. 4

    Prepare the Steak

Pat the hanger steak dry with paper towels. Season both sides with olive oil, garlic powder, salt, and black pepper.

  2. 5

    Cook the Steak

Heat a grill or skillet over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.

  3. 6

    Rest and Slice

Remove the steak from heat and let it rest for 5 minutes. Slice against the grain into thin strips.

Salsa Macha

  1. 7

    Prepare the Chiles

Remove stems and seeds from the dried chiles. Heat a pan over medium heat, and toast the chiles for about 1-2 minutes until fragrant.

  2. 8

    Blend the Salsa

In a blender, combine toasted chiles, garlic cloves, olive oil, and salt. Blend until smooth.

  3. 9

    Add Sesame Seeds

Stir in sesame seeds for added texture. Adjust seasoning if necessary.

Crisp Blue Corn Tortillas

  1. 10

    Heat the Oil

In a deep pan, heat vegetable oil over medium-high heat until shimmering.

  2. 11

    Fry the Tortillas

Carefully add one tortilla at a time to the hot oil. Fry for about 30 seconds on each side or until golden brown and crisp. Remove and drain on paper towels.

  3. 12

    Serve

Serve warm with guacamole, hanger steak, and salsa macha on the side.
