Preheat Oven
Preheat your oven to 350°F (175°C).

Prepare Filling
In a large bowl, combine the shredded cheese, black beans, chopped onions, and chopped cilantro. Mix well to combine all ingredients evenly.
Assemble Enchiladas

Warm Tortillas
In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Fill Tortillas
Take a warmed tortilla and place about 1/4 cup of the cheese and bean filling in the center. Roll the tortilla tightly around the filling and place seam-side down in a greased baking dish.

Repeat
Repeat the filling and rolling process with the remaining tortillas and filling.
Add Sauce

Pour Enchilada Sauce
Once all the enchiladas are in the baking dish, pour the enchilada sauce evenly over the top, ensuring all tortillas are covered.
Bake

Bake Enchiladas
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes until bubbly and slightly golden.

Garnish and Serve
Remove from the oven and let sit for 5 minutes. Serve topped with sour cream, sliced jalapeños, and chopped cilantro to taste.
