Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine the shredded cooked chicken, cheddar cheese, cream cheese, garlic powder, onion powder, cumin, salt, and black pepper. Mix well until fully combined. Set aside.

Sauce Preparation

    Prepare the Sauce

    In a saucepan, heat the olive oil over medium heat. Add the red enchilada sauce and stir well. Allow it to simmer for about 5 minutes, then remove from heat. Reserve half of the sauce for topping.

    Add Cilantro

    Stir in the chopped fresh cilantro into the remaining sauce in the saucepan.

Assembling Enchiladas

    Assemble the Enchiladas

    Preheat your oven to 350°F (175°C). Take a corn tortilla, fill it with about 1/4 cup of the chicken filling, then roll it tightly. Place the rolled tortilla seam-side down in a baking dish. Repeat with the remaining tortillas and filling.

    Add Sauce

    Pour the reserved enchilada sauce over the rolled tortillas in the baking dish, making sure to cover them evenly.

    Bake

    Sprinkle additional cheese on top if desired. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
