Cook the Pasta
In a large pot of boiling salted water, cook the tortiglioni pasta according to package instructions until al dente. Drain and set aside.

Sauté the Sausage
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sausage, breaking it apart with a wooden spoon, and cook until browned and cooked through, about 5-7 minutes.

Add Peas and Peppers
Stir in the sweet peas and roasted red peppers, cooking for an additional 3-4 minutes until heated through.

Combine with Sauce
Pour in the Romana rossa sauce, stirring to combine. Let it simmer for about 5 minutes to meld the flavors.

Mix with Pasta
Add the cooked tortiglioni to the skillet, tossing to coat the pasta evenly with the sauce. Season with salt and black pepper to taste.
