Preparation

Preparation Steps

1. Prepare the Marinated Tomatoes

In a bowl, combine the diced tomatoes, chopped basil, balsamic vinegar, salt, and pepper. Toss to combine and let marinate for at least 30 minutes.

2. Prepare the Mashed Potatoes

Prepare your favorite mashed potatoes recipe until smooth and creamy. Season with salt and pepper to taste.

3. Bread the Walleye

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.

4. Cook the Walleye

Heat olive oil in a large skillet over medium heat. Dip each walleye fillet into the flour, then the egg, and finally the breadcrumb mixture. Cook the fillets in the skillet for about 4-5 minutes on each side, or until golden brown and cooked through.

5. Serve

On each plate, serve a portion of mashed potatoes, top with a crispy walleye fillet, and finish with the marinated tomatoes. Enjoy!
