Roast the Vegetables
Preheat your oven to 400°F (200°C). Toss the red and yellow bell peppers, wild mushrooms, zucchini, and cherry tomatoes with 1 tablespoon of olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

Cook the Pasta
In a large pot, bring salted water to a boil. Add the linguini and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Sauté Spinach
In a large skillet, heat the remaining olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes.

Combine Ingredients
Add the roasted vegetables to the skillet with the sautéed spinach. Stir in the cooked linguini and add reserved pasta water as needed to create a light sauce. Mix in the fresh basil leaves and Pecorino cheese.

Serve
Season with additional salt and black pepper to taste. Serve warm, garnished with extra Pecorino cheese and basil if desired.
