Preparation and Cooking

    Make the Italian Sausage

    In a large bowl, combine ground pork, minced garlic, fennel seeds, red pepper flakes, salt, and black pepper. Mix well until fully combined. Shape the mixture into patties or links, as desired.

    Cook the Sausage

    Heat a skillet over medium heat and add a tablespoon of olive oil. Cook the sausage patties or links for about 5-7 minutes on each side, or until fully cooked and browned. Remove from skillet and set aside.

    Caramelize the Onions and Cook the Peppers

    In the same skillet, add another tablespoon of olive oil. Add sliced onion and cook on low heat for about 10 minutes until caramelized. Add sliced bell pepper and cook for an additional 5 minutes until tender.

    Assemble the Dish

    On a serving plate, layer the cooked sausage, caramelized onion, and bell pepper. Top with fontina and parmesan cheese. Drizzle tomato sauce over the top and garnish with fresh arugula.
