    Caramelize Onions

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add sliced onions and cook slowly, stirring occasionally, until they are golden brown and caramelized (about 15-20 minutes). Set aside.

    Sauté Garlic and Spinach

    In the same skillet, add another tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Then add chopped spinach and cook until wilted (about 2-3 minutes). Set aside.

    Combine Cheese and Vegetables

    In a large mixing bowl, combine Fontina, goat cheese, and mozzarella. Add the caramelized onions, sautéed spinach and garlic, roasted mushrooms, and lemon juice. Mix well until all ingredients are combined.

    Bake

    Preheat the oven to 375°F (190°C). Transfer the cheese and vegetable mixture into a greased baking dish. Bake for about 25-30 minutes or until the cheese is bubbly and golden on top.

    Serve

    Remove from the oven and let it cool for a few minutes. Serve warm as an appetizer or a side dish.
