Method

Preparing the Piquillo Mojo

    Blend the Mojo

    In a blender, combine the piquillo peppers, garlic, cumin, olive oil, lemon juice, and salt. Blend until smooth and set aside.

Roasting the Potatoes

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). In a bowl, toss the baby potatoes with olive oil, salt, pepper, and whole garlic cloves. Spread onto a baking sheet.

    Roast the Potatoes

    Roast in the oven for 25-30 minutes, or until golden and tender. Sprinkle with fresh rosemary before serving.

Grilling the Steak

    Prepare the Steak

    Season the hanger steak generously with salt and pepper. Allow it to sit at room temperature for about 30 minutes.

    Grill the Steak

    Preheat a grill to high heat. Add olive oil to the grill grates, then place the steak on the grill. Cook for 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Rest and Slice

    Remove the steak from the grill and let it rest for 5 minutes. Slice against the grain and serve with piquillo mojo and roasted garlic potatoes.
