1. Clean the Mussels
Rinse the mussels under cold running water. Scrub the shells with a brush to remove any debris. Remove the beards by pulling them off firmly.
2. Sauté Aromatics
In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced shallots, and sauté for about 3-4 minutes until they are fragrant and translucent.
3. Add Wine and Mussels
Pour in the white wine and bring it to a simmer. Add the cleaned mussels to the pot, cover with a lid, and cook for about 5-7 minutes, or until the mussels have opened up.
4. Season and Finish
Once the mussels are cooked, remove them from the heat. Stir in the chopped parsley, and season with salt and black pepper to taste. Discard any mussels that did not open.
5. Serve
Serve the mussels hot, with the broth spooned over them. Pair with crusty bread for dipping.
