Dough Preparation

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

    Prepare the Vegetables

    In a large bowl, combine the chopped cabbage, grated carrots, chopped shiitake mushrooms, and green onions.

    Season the Filling

    Add soy sauce, sesame oil, minced ginger, and minced garlic to the vegetable mixture. Mix well until everything is evenly coated.

Assembly and Cooking

    Roll Out the Dough

    After the dough has rested, divide it into small pieces. Roll each piece into a thin circle (about 3 inches in diameter).

    Fill the Dumplings

    Place a teaspoon of the vegetable filling in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal tightly.

    Prepare for Steaming

    Line a steamer basket with parchment paper or cabbage leaves to prevent sticking. Arrange the dumplings in the basket, making sure they are not touching.

    Steam the Dumplings

    Bring water to a boil in a pot. Place the steamer basket over the pot, cover, and steam the dumplings for about 15-20 minutes or until the dough is cooked and slightly translucent.
