Crust Preparation

    Combine Ingredients

    In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined.

    Form the Crust

    Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Use the back of a measuring cup to pack it tightly.

    Bake Crust

    Preheat your oven to 350°F (175°C). Bake the crust for 8-10 minutes until set and lightly golden. Remove from the oven and allow to cool.

Cheese Filling Preparation

    Dissolve Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.

    Melt Gelatin

    After blooming, gently heat the gelatin mixture in the microwave for about 10-15 seconds until fully melted. Set aside to cool slightly.

    Mix Cheese Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Add in the sour cream, powdered sugar, and vanilla extract, and mix until well combined.

    Add Passion Fruit

    Stir in the passion fruit pulp until evenly distributed. Then, slowly pour in the melted gelatin while mixing continuously until fully incorporated.

    Pour into Crust

    Pour the cheese filling over the cooled crust, smoothing out the top with a spatula. Refrigerate for at least 4 hours or until set.

Topping Preparation

    Prepare Topping

    Once the cheesecake has set, cut the fresh passion fruits in half and scoop out the pulp. Distribute the pulp over the top of the cheesecake.

    Sprinkle the sugar evenly over the passion fruit topping. Optionally, let it sit for a few minutes to allow the sugar to dissolve slightly.

    Run a knife around the edge of the springform pan to loosen the cheesecake. Carefully remove the sides of the pan. Slice into wedges and serve chilled.
