Prepare the Chicken
Cut the chicken breasts into bite-sized pieces and place them in a bowl.

Marinate the Chicken
Add 1 tablespoon of soy sauce and the cornstarch to the chicken. Mix well and let it marinate for at least 15 minutes.

Prepare the Sauce
In a small bowl, mix together the remaining soy sauce, sugar, rice vinegar, and sesame oil. Set aside.

Heat the Oil
In a large skillet or wok, heat the peanut oil over medium-high heat until shimmering.

Cook the Chicken
Add the marinated chicken to the skillet and stir-fry for about 5-7 minutes or until the chicken is cooked through and lightly browned.

Add Vegetables
Add the diced red bell pepper and zucchini to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

Combine with Sauce
Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything evenly.

Add Peanuts and Green Onions
Stir in the peanuts and chopped green onions. Cook for another 1-2 minutes until everything is heated through.

Season with salt and black pepper to taste. Serve the Kung Pao Chicken hot, over steamed rice or noodles.
