Dumpling Preparation

Make the Filling
In a large mixing bowl, combine ground pork, chopped shrimp, finely chopped mushrooms, and green onions. Mix well.

Season the Filling
Add soy sauce, sesame oil, grated ginger, minced garlic, salt, and pepper to the mixture. Mix thoroughly to ensure all ingredients are well combined.

Prepare the Dumplings
Place a dumpling wrapper in the palm of your hand. Add about 1 tablespoon of the filling to the center. Moisten the edges with water, fold the wrapper in half, and pinch to seal. Repeat with the remaining wrappers and filling.
Cooking

Steam the Dumplings
Set up a steamer basket over a pot of boiling water. Place the shumai in the steamer, making sure they are not touching. Cover and steam for about 10-12 minutes, or until the filling is cooked through.

In a small bowl, whisk together soy sauce, rice vinegar, chili oil, and sesame seeds. Stir in sliced green onions before serving.
