In a large pot, combine the whole milk and heavy cream. Heat over medium heat, stirring occasionally, until the mixture reaches 190°F (88°C). This will take about 10-15 minutes.

Once the milk and cream mixture is hot, remove it from the heat and add the lemon juice. Stir gently for about 1-2 minutes until the mixture curdles and separates into curds and whey.

Strain the Curds
Line a colander with cheesecloth and set it over a large bowl. Pour the curdled mixture into the colander, allowing the whey to drain. Gather the cheesecloth and rinse the curds under cold running water to remove excess acidity.

Once drained, transfer the curds to a mixing bowl. Add salt and any optional flavorings like dried herbs or garlic powder. Mix well to incorporate the flavors.

Transfer the cheese mixture back to the cheesecloth and shape it into a ball or disc. Wrap it tightly and place it in the refrigerator for at least 1 hour to firm up.
