Method

Preparing the Boba

    Cook the tapioca pearls

    In a large pot, bring 4 cups of water to a rolling boil. Add 1 cup of tapioca pearls and stir gently to prevent sticking. Cook the pearls according to package instructions, usually about 5-10 minutes until they are translucent and chewy. Once cooked, remove from heat and drain.

    Rinse the boba

    Rinse the cooked tapioca pearls under cold water to stop the cooking process and remove excess starch. Set aside.

Making the Brown Sugar Syrup

    Combine ingredients

    In a small saucepan, combine 1 cup of brown sugar and 1 cup of water. Stir to dissolve the sugar.

    Simmer the syrup

    Bring the mixture to a simmer over medium heat, stirring occasionally. Let it simmer for about 5 minutes until it thickens slightly. Remove from heat and let it cool.

Assembling the Drink

    Combine boba and syrup

    In a glass, add a portion of the cooked tapioca pearls at the bottom. Drizzle a few tablespoons of the brown sugar syrup over the boba.

    Add ice and milk

    Fill the glass with ice cubes, then pour 2 cups of your choice of milk over the ice. Add 1 tsp of vanilla extract and stir gently to combine.

    Top with additional brown sugar syrup if desired, and serve with a wide straw to enjoy the boba.
