    Preparing the Filling

    1. Boil the potatoes until tender, then peel and mash them. In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and ginger. Sauté until golden brown, then add the mashed potatoes, green peas, coriander powder, garam masala, salt, and mix well. Cook for another 5 minutes.

    Making the Dough

    2. In a bowl, mix 2 cups of all-purpose flour with a pinch of salt and enough water to form a smooth dough. Let it rest for 30 minutes.

    Assembling the Samosas

    3. Divide the dough into small balls and roll each into a thin circle. Cut the circle in half to form two semi-circles. Take one semi-circle, form a cone by folding and sealing the edge. Fill the cone with the potato filling and seal the top edge securely.

    Frying

    4. Heat oil in a deep frying pan. Once hot, carefully add the samosas and fry until golden brown on all sides. Drain on paper towels.
