    Begin by boiling water in a large pot. Add the chowmein noodles and cook according to package instructions until al dente. Drain and set aside.

    Cooking Chicken (if using)

    In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the chicken breast, season with salt and pepper, and cook until fully cooked. Remove from heat, chop into strips, and set aside.

    In the same pan, add the remaining vegetable oil. Add minced garlic and ginger, sauté for a minute until fragrant. Then add mixed vegetables and stir-fry for about 5-7 minutes until they are tender but still crisp.
