Prepare the Pickled Vegetables

In a bowl, combine the carrot and daikon. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Pour the mixture over the vegetables and let sit for at least 30 minutes.

Make the Smoky Aioli

In a small bowl, combine mayonnaise, smoked paprika, minced garlic, and lemon juice. Mix well and set aside.

Prepare the Chicken Patties

In a large bowl, mix ground chicken, jerk seasoning, salt, and black pepper until combined. Form into 4 equal patties.

Cook the Burgers

Heat a grill or skillet over medium heat. Cook the chicken patties for about 6-7 minutes on each side or until they are cooked through and have an internal temperature of 75°C (165°F).

Assemble the Burgers

Toast the burger buns if desired. Spread a generous amount of smoky aioli on the bottom bun, place the cooked chicken patty on top, add pickled vegetables, and finish with fresh cilantro. Top with the other half of the bun.
