1. Prepare the Brussels Sprouts
Wash and trim the Brussels sprouts, cutting them in half.
2. Roast the Brussels Sprouts
In a large skillet, heat olive oil over medium heat. Add the halved Brussels sprouts cut side down and roast for about 5-7 minutes until golden brown.
3. Add Seasoning
Add fish sauce, lime juice, and finely chopped Thai chili to the skillet. Stir well to coat the Brussels sprouts and cook for another 2-3 minutes.
4. Incorporate Kimchi
Stir in the cauliflower kimchi and cook for an additional 2 minutes until heated through.
5. Finish and Serve
Remove from heat, season with salt to taste, and sprinkle with roasted peanuts before serving.
