    Prepare the Potato Wedges

    Preheat your oven to 425°F (220°C). In a large bowl, toss the potato wedges with olive oil, salt, and black pepper until evenly coated.

    Bake the Potatoes

    Spread the potato wedges in a single layer on a baking sheet. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Once cooked, remove from the skillet and let it drain on paper towels. Chop into small pieces.

    Fry the Eggs

    In the same skillet, crack the eggs and cook sunny side up until the whites are set, about 3-4 minutes.

    Assemble the Dish

    Once the potato wedges are done, remove them from the oven. Top with cheddar cheese, crispy bacon, and a dollop of sour cream. Add the sunny side up eggs on top and sprinkle with chopped chives.
