Roasting the Pig

Prepare the Pig
Clean the pig thoroughly, removing any hair and innards. Pat dry with paper towels.

Marinate
In a bowl, mix olive oil, minced garlic, salt, black pepper, fresh herbs, and apple cider vinegar. Rub the mixture all over the pig, including inside the cavity. Let it marinate for at least 4 hours, ideally overnight in a cool place.

Roast the Pig
Preheat the oven or a large roasting pit to 250°F (120°C). Place the pig on a rotisserie or in a roasting pan and cook for about 6-8 hours, basting with water every hour to keep it moist. The internal temperature should reach 190°F (88°C).

Once cooked, let the pig rest for at least 30 minutes before carving. Serve with bao buns.
