    Prepare the Tenderloin

    Preheat your oven to 275°F (135°C). Rub the beef tenderloin with olive oil, salt, and black pepper. Let it sit at room temperature for 30 minutes.

    Roasting the Beef

    Place the tenderloin on a roasting rack in a baking dish. Roast in the preheated oven for about 45 to 60 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Sauté the Mushrooms

    While the beef is roasting, clean and slice the Hamakua mushrooms. In a skillet, melt 1 tablespoon of butter over medium heat. Add minced garlic and sauté for 1 minute, then add the mushrooms. Cook until they are golden brown and caramelized, about 8-10 minutes.

    Make the Tarragon Jus

    Once the beef is done roasting, remove it from the oven and let it rest for 15 minutes. In the same skillet used for the mushrooms, add the beef stock and fresh tarragon. Bring to a simmer and reduce slightly for about 5 minutes.

    Serve

    Slice the tenderloin and serve with the caramelized mushrooms on the side, drizzled with the tarragon jus.
