    Brine the Pig

    Start by brining the pig 24 hours before roasting. In a large container, combine water, kosher salt, and apple cider vinegar. Stir until salt is dissolved. Submerge the pig completely in the brine and refrigerate for 24 hours.

    In a bowl, mix together black pepper, minced garlic, chopped rosemary, chopped thyme, and olive oil to create a paste. Set aside.

    Preheat the Oven

    Preheat your oven to 225°F (107°C) or prepare your outdoor roasting setup with charcoal or wood.

    Remove the pig from the brine and pat it dry with paper towels. Rub the prepared mixture all over the pig, including inside the cavity.
