    Cook the Rice

    Rinse the white rice under cold water until the water runs clear. In a saucepan, combine 1 cup of the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Prepare the Bacon or Sausage

    In a skillet over medium heat, cook the bacon or Portuguese sausage until crispy and golden brown. Remove from the skillet and drain on paper towels.

    Scramble the Eggs

    In a bowl, whisk the egg with salt and pepper. In the same skillet used for the meat, add butter and let it melt over medium heat. Pour in the egg mixture and gently stir with a spatula until fully cooked and fluffy.

    Plate the Dish

    On a plate, place a serving of white rice, top it with the scrambled egg, and add the cooked bacon or sausage on the side. Garnish with chopped green onions if desired.
