    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to make fries.

    Soak the Potatoes

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Dry the Fries

    After soaking, drain the fries and pat them dry with a paper towel.

    Season and Bake

    In a large bowl, toss the fries with olive oil, salt, and black pepper. Spread them out on the prepared baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

    Prepare the Truffle Aioli

    While the fries are baking, combine mayonnaise, minced garlic, truffle oil, and lemon juice in a small bowl. Mix well and adjust seasoning to taste.

    Add Parmesan

    Once the fries are done baking, remove them from the oven and immediately sprinkle grated Parmesan cheese on top while they are hot.

    Serve the fries hot with the truffle aioli on the side for dipping.
