Prepare the Potatoes
Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean, then pierce them several times with a fork. Rub olive oil over the skins and sprinkle with salt. Wrap each potato in aluminum foil and bake for about 45-60 minutes until tender.

Cook the Ribeye Steak
Season the ribeye steak with salt and pepper on both sides. Heat a cast-iron skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare. Adjust cooking time to your preferred doneness. Remove from skillet and let rest for 5 minutes.

Prepare the Shrimp
While the steak is resting, heat another tablespoon of olive oil in the skillet over medium heat. Add the Kauai shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until they turn pink and opaque.

Prepare Loaded Baked Potatoes
Once the potatoes are done, carefully unwrap them and slice them down the middle. Fluff the insides with a fork and add butter, sour cream, and cheddar cheese. Mix in chopped chives and season with salt and pepper to taste.
