Prepare the Tofu
Press the tofu to remove excess moisture. Cut it into cubes.

In a skillet over medium heat, add a little oil and cook the tofu cubes until golden brown on all sides, about 8-10 minutes.

While the tofu is cooking, chop the mixed greens, slice the cherry tomatoes in half, dice the cucumber, and thinly slice the red bell pepper and red onion.

In a bowl, whisk together soy sauce, Sriracha, sesame oil, rice vinegar, honey or maple syrup, minced garlic, and minced ginger until well combined.

In a large bowl, combine the mixed greens, cooked tofu, cherry tomatoes, cucumber, red bell pepper, red onion, and diced avocado. Drizzle the dressing over the salad.
