Vanilla Bean Ice Cream

    Prepare the Base

    In a saucepan, combine heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves.

    Add Vanilla

    Split the vanilla bean lengthwise and scrape the seeds into the cream mixture. Add the bean pod for flavor.

    Temper the Eggs

    In a bowl, whisk together egg yolks. Gradually add a cup of the warm cream mixture to temper the yolks, then return to the saucepan.

    Cook the Mixture

    Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.

    Chill and Churn

    Remove from heat, strain if necessary, and chill the mixture in the refrigerator for at least 4 hours. Then churn in an ice cream maker according to manufacturer's instructions.

    In a saucepan, combine heavy cream, whole milk, and sugar over medium heat until the sugar dissolves.

    Add blue food coloring and mix until evenly distributed. Stir in cookie dough and chocolate chips.

    Chill the mixture in the refrigerator for at least 2 hours. Then churn in an ice cream maker according to manufacturer's instructions.
