Prepare the Fried Rice
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cooked rice, breaking up any clumps, and stir-fry for about 3-4 minutes until heated through.

Add the Seasoning
Pour in the soy sauce and oyster sauce, and stir well to combine. Add salt and pepper to taste. Mix in the chopped green onions and cooked char siu, and stir-fry for an additional 2 minutes.

Cook the Eggs
In a separate non-stick frying pan, heat the remaining tablespoon of vegetable oil over medium heat. Crack the eggs gently into the pan and cook until the whites are set but the yolks remain runny, about 2-3 minutes.

Serve
Plate the fried rice and top each serving with a sunny-side-up egg. Garnish with additional green onions if desired.
